    Lightbulb Egg Salad with Black Olive

    I was eating my hard boiled eggs the other day, and was thinking about the good old fashioned Egg Salad with GREEN olives we all USED to eat before we got smart! I put the following together and I thought it was pretty good...next time I make it I'm going to add some red bell pepper! You'll have to let me know if you like it! Thanks!

    EGG SALAD with BLACK OLIVE

    4 hard-boiled eggs, chopped
    ¼ c. celery diced small
    ¼ c. onion diced small
    8 black olives, sliced
    2 1/2 T. Fast Track Mayo (p. 224) or Easy Classic Mayo, p. 235 in Fat Flush for Life)
    Couple shakes of dried dill
    Dash cayenne or to taste

    Mix all ingredients together. Even better the next day!

    I made this recipe and it was wonderful! I used kalamata black olives...may have had too much sodium but sure did pack flavor! I'm still asking what the refrigerated shelf life of the FT Mayo??? Thanks!

    Hi Susan,

    Sorry...I missed your question!

    I would say the shelf life of the FT Mayo is about 4 days.

    You're right, kalamata olives are saltier so use them sparingly.
