    CatMatt - yes the sprouting does something to the gluten. Doesn't make it wheat free, but changes enough that it should be ok.

    Suerra - I just picked up spelt flour and was going to try my hand at making a wheat free, yeast free bread with oats, flaxseeds, sunflower seeds, etc. I'm also going to play with the idea of making a cracker from same stuff, different proportions. Next will be same thing, but with sweet potatoes as the main ingredient - like Lefse (scandanavian potato flat bread). Lots of experimenting to do

    Oh my goodness! Wendya that sounds ahhhmazing I would love to hear how it turns out! I use coconut flour for what little baking I still do, and I've been very happy with all my experiments thus far! You might also check out Paleo Bread- coconut or almond based flours and eggs, very simple!

    The bread turned out wonderful, but with honey in it is rather sweet. It would be amazing with the addition of cinnamon and some spices and turned into a 'banana bread' type of treat. I'll post the recipe soon. Pretty proud of myself. Replaced the almond milk with coconut milk (lots of fresh stuff on hand), replaced the oil with peach pulp from the juicer. Added lots of flax seed, oatmeal and good stuff. Really thick and dense.

    The crackers were the best! Hard to get them rolled thin enough, so gonna use the pasta machine. They really taste like wheat thins!

    The sad news is that my ankles swelled, so I'm thinking I may have a bit of wheat intolerance. Never had a reaction before, but can't think of what else is in there that would do that to me. So my partner gets to eat all the goodies and I get to eat my yummy purple sweet potatoes. Will play with coconut flour next. Thanks for reminding me that I have some in the cupboard. Loved the crackers and I think having a 'wheat' crunchy type thing in my diet is all I will need for the rest of my life

    BTW, I'm removing the word "stuck" from my vocabulary. My marvelous Tanita scale has revealed that I'm building muscle, losing water and really changing my body composition. Those numbers between my toes can be what they will...my fat to muscle ratio is changing and that's what I really want to see.

    Since my original post, I've built enough extra muscle to burn 40 more calories a day. Not much but over a year that makes a difference.

    Just goes to show that we really can't rely on a number to provide all the information about our results. So many healthful benefits can't be reflected in mere pounds and ounces..........
