CatMatt - yes the sprouting does something to the gluten. Doesn't make it wheat free, but changes enough that it should be ok.
Suerra - I just picked up spelt flour and was going to try my hand at making a wheat free, yeast free bread with oats, flaxseeds, sunflower seeds, etc. I'm also going to play with the idea of making a cracker from same stuff, different proportions. Next will be same thing, but with sweet potatoes as the main ingredient - like Lefse (scandanavian potato flat bread). Lots of experimenting to do![]()
