    Default Rhubarb

    When cooking Rhubarb for a smoothie, what consistency should you cook it down to? I've did a search on here, doesn't really tell ya how to cook it. I googled it, it gave different ways of stewing it or baking it for other nonFFP recipes, so I was just curious of what texture to try for, b/c I assume I would have to freeze it for the smoothie?

    Roxsy - I "stew" it w/a bit of Cran juice and raw, grated ginger (if you don't like things tart, you may want to add a pkt of Stevia+) - it'll look a bit like applesauce. I then freeze it in 1/2 c servings. for smoothies - it's great with either strawberries ot raspberries! Yum! It is rhubarb season - and it is counted as a veg, not a fruit!!

    Freezing as a 1/2 serving...wouldn't that be hard when getting ready to blend for a smmothie? How much would I use in a smoothie...never tasted it, not sure of how strong it is. I was thinking of making a ice cube tray of them. Would rhubarb by itself be good in the smoothie? Trying to come up of a way to save my fruits for the afternoon. Thanks Mandy

    Sorry, reading your post over I see you use 1/2 cup for your smoothies...Ooops!!

    Yes - and I mix w/1/2 cup of berries... still fruit left over for snacks! But - freeze it in whatever portion you like... it's your smoothie! lol!!

    I've been using 1/2 c. cut in 1" lengths, straight from the garden. It's so energizing with all the enzymes. It's nice and tart. I use lots of cinnamon and a few cubes of ice. I use 1/2 c either strawberries or raspberries with FF Vanilla Whey or Body Protein. It's soooo good.

    Thanks for this information. I came to the board tonight to ask this question & there it was! I bought some frozen rhubarb by Dole--but I'm not sure it's cooked. Liz, you use it raw? That would be easier, then I wouldn't have to thaw it to cook & then re-freeze.

    I do use it raw. Why cook out the enzymes? You are blending it (pureeing it) so that the fiber is more digestible.
