Olive oil cooking spray 1/2 C chopped shallots 2 cloves garlic, minced (Optional - not in original recipe) 2 C fresh grapefruit juice (about 3 to 3 1/2 grapefruit) 2 T chopped fresh cilantro 1 packet Stevia Plus 2 T Flaxseed Oil

Spray large non-stick skillet with cooking spray & heat over medium heat. Add shallots & garlic, cook 5 minutes or until golden brown. Stir in juice. Bring to boil over medium-high heat, and cook until reduced to 1 C (the recipe says about 6 minutes, but it took my batch about 12 minutes). Remove from heat & cool.

Place cooled juice mixture, cilantro & Steva Plus in blender; process until smooth. With blender on, slowly add 2 T Flaxseed Oil, process until smooth.

ROASTED RED PEPPER RANCH SALAD DRESSING

Put into BLENDER:
1/2 cup apple cider vinegar
1 egg plus roasted red peppers to equal 1/2 cup
cayenne and garlic cloves to taste.
chives or scallion too, if you like!

Blend till smooth.
Add 1/2 cup Flax seed oil.
Blend again and keep in a jar in ref.
It thickens as it sits! Good for at least a week.

1 Tb dressing = 1 Tsp. FSO.
Tasty on veggies and meat as well as on salad!

AMAZING SALAD DRESSING

*Phase 1 or 2 depending on mustard

Measure into food processor or blender:

10 Tb flax seed oil
10 Tb apple cider vinegar
6 Tb. lemon juice
1 Tb. prepared dijon mustard (P2) or dry mustard (P1)
1 Tb. chopped garlic
2 Tb. chopped olives (about 10 kalamata olives)
then
10 Tb. Muir Glen chopped tomatoes with juice, OR
10 Tb. roasted red peppers
And
cayenne pepper, to taste. -- a lot in my case!

Whirl till smooth, and keep in a salad dressing jar.

Here's the great news: you use 3, yes 3 Tablespoonfuls of this dressing, and it counts as 1 Tb of FSO!

Delish on salads (natch), grilled chicken or fish, steamed veggies, egg dishes, roasted squash, and so far just about everything I've put it on. It also passes all the tests for my friends... not just FFing friends!!!

Note from dsb:
This is my DH's favorite dressing - he had been after me to buy more of the store stuff before I tried Sarah's. I am happy to say, he likes this better than the other stuff!

SIMPLE CREAMY "RANCH- STYLE" DRESSING

1 tbsp *Fat Flush Mayonnaise
juice of 1/2 lemon or a little bit less depending on taste
onion powder to taste
pinch of cayenne
garlic powder to taste

*Fat Flush Mayonnaise

FF Caesar Dressing
(see my picture trail for pictures of this at our FF luncheon... delish on salad or fish or veggies!)

put into blender:
1 egg, raw (see last post about raw eggs... IT'S OK!)
grated rind from one lemon
juice from one lemon
1 garlic clove
1 tsp. dijon mustard
1 sprinkle cayenne pepper
1 envelope Stevia Plus
Blend till smooth.
Add enough cider vinegar to make 1 cup total in blender.
Add enough flax seed oil (or olive oil) to make 2 cups total.
Blend until smooth.

2 tbs equals 1 tb. of oil!

Pomegranate Vinaigrette (P1)

1/4 cup unsweetened pomegranate juice
1/4 cup lemon or lime juice
1/2 cup flaxseed oil
3 cloves garlic, smashed
1 teaspoon crushed fennel seeds

DIRECTIONS:
1) blend all ingredients well and store in sealed container in the fridge.
Makes just over 1 cup or 8 servings @ 2 Tbsp per serving.

This dressing is actually sweet-ish and a refreshing change from more tart vinaigrettes. []

FF Raspberry Vinaigrette

Put into blender:
1/2 cup cooked down raspberries (simmer or microwave about 3/4 cup to get the 1/2 cup)
1/2 cup AC vinegar
2 Tb. minced onion
pinch cayenne
1 cup flax seed oil
1 Tb. ground flax seed

Puree all together until totally smooth.

Add 1-2 env. Stevia+, and a pinch of dry mustard, to your taste, and blend.

The flax SEED helps to emulsify the whole thing... it's a deep pink, and it seems to stay emulsified! This is REALLY good on just plain greens, or on veggies, meats, etc. A little goes a long way. 2Tb. is one serving of FSO. Tonight I had it on steamed broccoli. It's NOT a super strong raspberry taste. More of a sweet-n-sour type dressing.

I've been wondering whether to add a tiny bit of onion... what do you think? It's dee-lish as is but I can imagine a little more zing or complexity. : )

EDITED 05/17/07: added that onion and it's GREAT! This is SOOO good! My new fave!
