In the latest edition there is a recipe for Shallot & Grapefruit Dressing that sounded good & modified beautifully. Olive oil cooking spray 1/2 C chopped shallots 2 cloves garlic, minced (Optional - not in original recipe) 2 C fresh grapefruit juice (about 3 to 3 1/2 grapefruit) 2 T chopped fresh cilantro 1 packet Stevia Plus 2 T Flaxseed Oil

Spray large non-stick skillet with cooking spray & heat over medium heat. Add shallots & garlic, cook 5 minutes or until golden brown. Stir in juice. Bring to boil over medium-high heat, and cook until reduced to 1 C (the recipe says about 6 minutes, but it took my batch about 12 minutes). Remove from heat & cool.

Place cooled juice mixture, cilantro & Steva Plus in blender; process until smooth. With blender on, slowly add 2 T Flaxseed Oil, process until smooth.
